The Delight of Mushroom and Chinese Chives
The Allure of the Dish
Mushroom and Chinese chives not only taste delicious but also are rich in nutrition. As a popular dish, it is beloved by many. On the New Year’s Eve dinner table filled with rich and greasy food, this dish is undoubtedly a great accompaniment for rice. Mushroom, the second – largest edible fungus in the world, is also one of the special products in China. Among the people, it has long been known as a “mountain treasure”. It is a fungus that grows on wood, with a delicious taste, an enchanting aroma, and abundant nutrition.
Ingredients for the Dish
Required Materials
- 8 Chinese chives
- 6 mushrooms
- 1 scallion
- 1 slice of ginger
- 2 spoons of oil
- 3 cloves of garlic
- 2 spoons of oyster sauce
- 1 spoon of starch
- Half a bowl of water
Step – by – step Cooking Process
Preparing the Seasonings and Vegetables
Prepare scallion pieces, garlic slices, ginger shreds, oyster sauce, and water – starch mixture (1 spoon of starch and half a small bowl of water). Wash the Chinese chives and cut them in half vertically.
Preparing the Mushrooms
Wash the mushrooms, remove the stems, and cut them into slices or make decorative cuts (personally, I prefer slicing for better flavor).
Cooking the Chinese Chives
Boil water in a pot. When the water is hot, add 1 teaspoon of salt and 1 teaspoon of oil (this way, the vegetables will be bright green when cooked, and the nutrition will not be lost). Add the Chinese chives and blanch them until cooked.
Arranging the Chinese Chives
After blanching, rinse the Chinese chives with cold water and drain them. Arrange them around the edge of a plate.
Cooking the Mushrooms
Heat oil in a pot. When the oil is hot, add scallions, ginger, and garlic, then pour in the oyster sauce and half a bowl of water. When the water is hot, add the mushrooms and cook until they are done.
Placing the Mushrooms
Place the cooked mushrooms in the middle of the Chinese chives.
Making the Sauce
Add the water – starch mixture to the broth in the pot, turn to low heat, and stir continuously. When the broth thickens, pour it over the mushrooms and Chinese chives. A refreshing and appetizing mushroom and Chinese chives dish is ready. Let’s give it a try.
Cooking Tips for Different Styles
- Slicing the mushrooms makes them more flavorful, while making decorative cuts makes the dish more beautiful. Choose according to your preference.
- Wash the Chinese chives and cut them in half.
- Adding oil and salt when boiling the Chinese chives can better maintain the color and flavor of the dish.
- Both soy sauce and oyster sauce are salty, so add salt as appropriate.
